About us
The King’s Cow is the shared vision of its founders, Mike Spink and Charlie Jeffreys. Charlie, the Head Chef, brings a passion for creative cooking rooted in local ingredients, alongside deep interests in hunting, butchery and foraging. Mike contributes his architectural background, curating the spaces and overall hospitality experience.
The kitchen is supplied by two nearby regenerative farms. The closest, just one mile away, is run by Mike’s wife, Maria, and is home to a small herd of Dexter cattle grazing in surrounding meadows. The second, larger farm near Nettlebed is managed by farm manager James Porter and includes rotational arable crops, a new Red Poll herd, sheep, and (soon) pigs and chickens. Together, these farms supply meat, wheat and vegetables, all produced using nature-friendly regenerative agriculture practices. Both are Certified Pasture for Life farms. The kitchen also works with a wider network of suppliers, prioritising organic and local produce wherever possible.

The King’s Cow encourages guests to “see the evidence”: to understand the nutritional benefits of pasture-fed meat, and to explore the positive impact responsible grazing has on the landscape of the Chilterns, including its role in carbon sequestration. Take a look:
Dining
A 300-year-old Inn in the Chilterns, The Kings Cow brings together field, kitchen and table.
The daily-evolving à la carte menu champions our two nearby farms, with a focus on seasonality, provenance and honest, ‘nose to tail’ cookery.
The fireside bar offers everything from espresso, to beers and fine wines, along with the Bar Plates of the day
Private Dining
Centred around its fireplace and opening onto the kitchen garden, the private dining room seats between 10 and 20 guests. It’s a space designed for long lunches, shared tables and unhurried celebrations.
The Rooms
The Inn has three rooms on its first floor, with a fourth room and balcony on the second. The rooms are restrained in their design and character, celebrating craft and quality over decoration for its own sake. All rooms feature sustainable geothermal air conditioning for the warmer months, alongside the essentials: tea and coffee, generous bathrooms with large showers, and – most importantly – high-quality, five-star, emperor-size beds.
